Roasted ears of sweet corn, kernels removed

fresh tomatoes
cubed into about 11/2 - 2" pieces
1/2
cup
chopped shallots
3/4
cup
red onion, chopped
1/3
cup
evoo

tbsp
red wine vinegar
salt and pepper to taste
Instructions
Whisk together the evoo, vinegar, and shallots. Add in desired salt and pepper. Let sit for about 15 minutes.
Remove kernels from corn. Dice tomatoes into large pieces.
Add corn, red onion, and dressing to tomatoes.
Serve over arugula or lettuce of your choice.
