Fresh Tomato Sweet Corn Salad

Ingredients
  

  • 6 Roasted ears of sweet corn, kernels removed
  • 2 lbs fresh tomatoes cubed into about 11/2 - 2" pieces
  • 1/2 cup chopped shallots
  • 3/4 cup red onion, chopped
  • 1/3 cup evoo
  • 2 tbsp red wine vinegar
  • salt and pepper to taste

Instructions
 

  •   Whisk together the evoo, vinegar, and shallots. Add in desired salt and pepper.  Let sit for about 15 minutes.  
  • Remove kernels from corn.  Dice tomatoes into large pieces.
  •   Add corn, red onion, and dressing to tomatoes.
  • Serve over arugula or lettuce of your choice.
